Idli varieties







Idllies is traditional breakfast in South Indian households. Idli is savoury cake that is popular through out India and neighbouring countries like Shrilanka. Idli is said to be light as it contains no fats, saturated fats and cholesterol. It has 39 calories per piece. Idlies is rich in fiber and protein and thus promotes good digestion which is a key to loose weight. 


Ingredient....
  1. Rice - 3 cups (regular rice or idli rice)
  2. Urad dal/ Split white lentil - 1 cup
  3. Poha - 1/2cup
  4. Water enough for soaking and 2-3 glass for steaming 
  5. Salt as per taste

Soak  rice and lentil in water  for 4-5 hrs, take in mixer grinder , then grind into a smooth paste by adding water .


let the batter rest for fermentation overnight


Well fermented batter .


Add salt and mix properly.


Put 1-2 glass of  water in the steamer for heating.


Put in one small piece of lemon to avoid darkening of vessel.



Pour the batter in the greased plate and steam for 10-15 min.

    
                               



Steamed idlis.


For stuffed Idlies....


take boiled potatoes...


peel it off.


grate the potatoes or smash it.


Add in spices of your choice . Here i have added turmeric , red chilly powder,coriander powder, amchur powder,salt, jeera powder and oil.
you can add also add in grated paneer ,cheese  and boiled peas


add chopped corainder leaves.


make small tikkies.


grease the plate and pour 1 spoon of batter.


place the alloo tikkies on it .


pour 1 spoon of batter on the tikkies.




place the plate in the steamer and steam for 10 -15 min.




For Microwave Idlies....



Grease the silicon moulds .


Pour in the batter and microwave on high for 40 sec.




For Mini Idlies....



Mini idli plates are easily available in the market .grase the plate with one drp oil.


pour in the batter with the help of small t-spoon.


put in the steamer .


close the lid and steam for 5-10 min.


you can also add tempering or tadka of jeera and mustard .

For colourful Idlies....


take small amount of batter in a separate bowl add in turmeric powder.


mix.


pour in the batter . i have used mini idli plate.


steam like regular idlies.



deep fried idli.
till golden crispy.
Sprinkle some chilly powder and chat masala.
