Caramel Custard
Caramel custard is easy to make pudding and is popular all over India but made especially well by the Parsis, Mangaloreans both from western India and Anglo Indians.It can be steamed in pressure cooker or also baked in oven.
How it came to me .....Once my colleague was expecting and i asked her what she would like me to bring for her which would help her enhance her taste buds and she said Caramel custard.I was like, I have never made it and how I can bring it for her, still I managed telling her "Sure I will bring it for you" Further I started searching over it and came across many recipes of caramel custard and there i came with this delicious dish , brought for her at office ...everyone liked it and even shared the recipe with most of the other colleagues .Next day i was surprised when two of my other colleagues tried successfully and appreciated a lot .So many compliment had made me top of the world ,and now on many requests of my friends and colleagues included this in my blog. Do give it a try , it is very simple and few ingredient recipe and off-course no fail recipe.When you come up with this awesome desert please share your experience and comment in the box below.
Ingredient.....
- Milk - 2½ cup ( lukewarm milk )
- Vanilla essence - ¼ th tsp
- Sugar as required - 1 cup
- water 1-2 tsp
- eggs - 3
First step - To make Caramel
Take ¼ cup of sugar in a pan and add 1-2 tsp of water to it .
Heat it till sugar completely dissolves and changes its colour.
First it turns to light brown and further heating turns to dark brown.
This is the perfect colour of our caramel.
Pour the hot caramel immediately in the silicon moulds .you can also use steal bowl or cake tin.
Allow it to set at room temperature.
This is how our caramel is set .We can also make some extra caramel for garnishing our pudding while serving.
Second step - Custard making
Take 2 ½
cup of lukewarm milk in a vessel.
Add vanilla essence .
Add sugar according to taste required.
transfer the milk mixture to a mixer juicer.
Add in one by one 3 eggs blend properly.
Strain the milk and egg mixture once .
Pour the milk mixture on the set caramel in the silicon moulds
Place all the moulds in a tin suitable for steaming.(I have used cake tin )
Place it in a steamer with a weight on it and steam for about 15-20 minutes.
cool it completely in refrigerator.
demould the caramel custard.
This yummy caramel custard is ready to satisfy our taste buds.
