Pineapple cake / Number cake
Ingredient....
For sponge...
- Maida/all purpose flour - 2 + 1/2 cup
- Baking powder -2 tsp
- Baking soda - 1 tsp
- Butter /oil - 100 gms
- Powered sugar - 1/2 cup
- Condensed milk - 2/3 cup
- Milk/soda water - 1 cup
- Vinegar - 1tsp
- Pineapple essence - 1 tsp
For Frosting...
- Whipping cream - 4 cups
- Pineapple crush - 1 cup
- Yellow colour
Note- Remove all the ingredients from fridge and bring to room temperature before baking and making frosting.

Step 1 Making sponge
Take 100 gms or 1/2 cup of melted butter in a bowl.
Sieve in 1/2 cup of powdered sugar.
Mix well till creamy smooth.
Add in 2/3 cup condensed milk.
Sieve in 2+1/2 cup of maida 👆 👇
1 tsp baking soda.
Gradually add in milk .
Mix well.
Add 1 tsp pineapple essence and 1 tsp of vinegar .....mix well.
Add in yellow colour and divide the batter into two equal portions
For 2nd number cake we need one round sponge and one rectangular shape sponge.
Pour in the batter in respective tins.
One cake is baked in pan under gas stove for 30 min
And another in otg for 25 min.
Cool the cakes completely.
On round cake make an circular mark in the center with the help of glass or cookie cutter.
Insert knife, holding it straight and cut along the circular Marking as shown in the picture.
Also cut the ring shape and separate its 1/4 part (slightly more)
Arrange all the parts to get number 2. Trim the cake from upper surface to get flat surface on the cake.
Cut each parts in to two equal slices.
Whip the whipping cream.
Make all the necessary arrangements for assembling the cake.
Spatula palate knife ,spoons,tissue paper,piping bags ,8 star nozzle and pineaple crush.
Check for stiff peak .
Check the peak by inserting a spoon in the centre of the cream and it should stand and not fall.This indicates that our cream is well whipped.
Remove the upper slice of each part of cake
Soak the cake with pineapple juice.
(Juice = add 2-3 tbsp of Pineapple crush in one glassful water)
Soak complete cake with lot of juice otherwise cake will soak all the water from the whipped cream leaving the cake dry .
Spread whipped cream.
Load it with lots of whipping cream .
Spread uniformly with palate knife.
As shown in above picture.
Now add pineapple crush over the cream.
Spread evenly. Pineapple pieces can also be added.
Place second slice of each part of cake.
Again soak the sponge with pineapple juice.
Start covering the sides of the cake with whipped cream.
Cover the whole cake with whipping cream.
Take some amount of whipped cream in a bowl and add yellow colour to it . Mix well.
Fill in the piping bag with a star nozzle inside and start designing on cake .
Make any nozzle design of your choice.
Fill up all gaps.
