Rainbow Cake / Mirror glaze cake

Rainbow is a dream cake of all kids. Children are excited to see various colours in there birthday cake and may God shower all the wonderful colours on them.
 My daughter Ishita ,desperately wanted Rainbow cake for her 10th birthday.She had a various plans on her birthday related to Rainbow and I was behind to complete those all.I had never tried with so many colours on cake before and the search started for rainbow cake.Whenever we plan something ,we always  has to be behind all the required ingredients, instuments,tins and gather those all before actually making it.This way I had multiple things in my mind before making rainbow cake.I had many tins ,but wanted one inch height tin so that each colour slice would come out well isolated and in uniform shape and thickness too.Also thought of pouring different colours of cake batter one on other but was scared of getting it mixed in every way whether baking it in otg or gas oven.Finally I decided and took a risk of making it in Microwave oven and that too in the lid of my borossil vessel which had a perfect height I needed . I generally use microwave to make instant cake whenever required during emergency.I use microwave on high option and my cake is done in 4-5 min.This runs a best option for me always.
     Basic sponge was decided but now comes the  question of frosting and decoration. Recently I saw mirror glaze cake online by Smitas classes and bingo ....It showed all the colours of rainbow and my mind set it all.
    Tried Rainbow cake for the first time,some innovation ,some search,some of my kids ideas and it worked mind blowing and super delicious...


Ingredient....
For sponge...
  1. Maida/all purpose flour -1+1/4 cup  
  2. Baking powder -1 tsp
  3. Baking soda - 1/2 tsp
  4. Butter - 50 gms
  5. Powered sugar - 1/4 cup
  6. Condensed milk-1/3 cup
  7. Milk/soda water - 1/2 cup 
  8. Vinegar - 1tsp
  9. Vanilla essence - 1tsp
For Frosting...
Whipping cream - 2 cups
Pineapple crush
Kiwi crush
Orange crush

For Glaze...
  1. White compound chocolate - 1/3 cup
  2. Amul fresh cream - 1/3 cup
  3. Glaze / neutral gel /transparent gel -1/3 cup
  4. Liquid whipping cream - 2tbsp
Note- Remove all the ingredients from fridge and bring to room temperature before baking  and making frosting.

Step 1 Making colourful sponge

Take 50 gms or 1/4 cup of melted butter in a bowl.
Sieve in 1/4 cup of powdered sugar.
Mix well till creamy smooth.
Add in 1/3 cup condensed milk.
Sieve in 1+1/4 cup of maida 👆  👇
1 tsp baking powder.
1/2 tsp baking soda.
Gradually add in milk .
Mix well.
Add 1/4 tsp Vanilla essence and 1 tsp of vinegar .....mix well.
Flowy consistency is needed👆
Our batter is ready.
Divide the batter in to five equal portions.
Add colour to each portion .
Red, yellow,blue, green, orange
Mix well.
Pour the batter into the well greased or lined with butter paper in a microvable container and microwave for 2 minutes on high.(my high  is 900 ,so adjust the time accordingly)
(I have used lid of my borossil vessel,which has 1 inch height)
Demould the when cooled completely.
Similarly Microwave all the portion .
Microwave on high for 2 minutes.

This way microwave all the five colour batter separately  and our colourful spongs are ready.

Step 2 Now let's whip the cream...

For 1 kg cake ,take 2 cups of whipping cream in a chilled vessel and whip the cream with electric beater till stiff peak is formed.
Check the peak  by inserting a spoon in the centre of the cream and it should stand and not fall.This indicates that our cream is well whipped.
Now take one slice on the cardboard base placed on the turn table and spray some water on the cake to add moisture to the sponge.(do not avoid this step because sponge will absorb all the water from cream and leave the cake dry)
Further... uniformly spread whipping cream with spatula.
Add some kiwi crush on green slice.
Some pineapple crush on yellow slice of the cake.
Cover the cake with whipped cream and set in refrigerator for 15 min.
Again apply some whipped cream to give the finishing to our cake.


Step 3 Mirror glaze ....
Heat 1/3 cup of Amul fresh cream in microwave for 30 sec and add in 1/3 cup of white compound chocolate and again microwave for 30 sec.
Neutral gel /glaze 1/3cup
Add in gel/glaze and microwave for 30 sec
Now add two tbsp of liquid whipping cream and microwave again for 10 sec 
Our glaze is ready.
Add few drops of different colours.
I have added red, yellow and blue.
With the help of toothpick join the drops.
This creates beautiful design on the surface of the glaze.
Check the temperature of the glaze ,it should be warm , pour the glaze on the cake.
Cover all the cake with glaze.
This gives mirror effect to our cake.
Yummy mixed fruit mirror glaze cake is ready for the rainbow theme birthday party.
