Dutch cake


   

Ingredient....
For sponge...
  1. Maida/all purpose flour -1 cup  
  2. Cocoa powder - 1/4 cup
  3. Baking powder -1 tsp
  4. Baking soda - 1/2 tsp
  5. Butter - 50 gms
  6. Powered sugar - 1/3 cup
  7. Condensed milk-1/3 cup
  8. Milk/soda water - 1/2 cup 
  9. Vinegar - 1tsp
  10. Vanilla essence - 1tsp
For Frosting...
Whipping cream - 2 cups

For Ganash...
  1. Dark compound chocolate - 1/2 cup
  2. Amul fresh cream - 1/4 cup
  3. Glaze / neutral gel /transparent gel -1 tbs
Note- Remove all the ingredients from fridge and bring to room temperature before baking  and making frosting.

Step 1 Making chocolate sponge

Take 50 gms or 1/4 cup of melted butter in a bowl.
Sieve in 1/3 cup of powdered sugar.
Mix well till creamy smooth.
Add in 1/3 cup condensed milk.
Sieve in 1 cup of maida 
1 tsp baking powder.
1/2 tsp baking soda.
Gradually add in milk .
Mix well.
Add 1/4 tsp Vanilla essence and 1 tsp of vinegar .....mix well.
Add 1/4 cup of cocoa powder.Add 1-2 tbsp of milk if required.
Mix well.
Pour in a well greased tin lined with butter paper.

Bake in preheated pan with a rack in it for about 30 min.

Step 2 Making Ganash....

Chop dark compound chocolate.
Take 1/4 cup of Amul fresh cream in a bowl and microwave it for 30 sec.
Add 1/2 cup of dark compoud chocolate.
Mix .

Step 3 Assemble the cake.

Whip the whipping cream and assemble all the required things for frosting cake.
turn table,spatula, palate knife,cutting knife,cake sponge, ganash ,chopped chocolate and whipping cream.
Cut off the upper part of the sponge which is dome shape.we require a flat surface.
Slice the cake in to 3-4 slices.
Take one slice on turntable and soak with water.
Load the slice with cream and spread with palate knife.
Top it with ganash and some dark chocolate.
Repeat the process with all the slices.
Crumble coat the cake and set in fridge for 10 min.
Cover the cake with more whipping cream and give the finishing.
Add one tbsp of neutral gel in ganash to get good shine.
Mix and pour it on a cake.
Cover the cake with ganash.

Shift the cake to a base (card board) with palate knife carefully .
Design it with nozzle 
Fill the cream in a piping bag and write a message on cake.
Keep in fridge
