Undhiya/Undhiv

 Undhiyu is a Gujrati mixed vegetable dish that is a regional speciality of Surat, Gujrat, India.
Undhiyu with puri and gajar halwa is often eaten in Gujarati houses during the winter.It is also served at weddings and banquets. Undhiyu can be made only during winter as all main vegetable are seasonal and are available only during winter season.

Ingredient.....

For Muthiya we need....
  1. Methi washed and finely chopped - 3 cups(1 judi)
  2. Besan - half cup  
  3. Wheat flour - 1 cup
  4. Barik rawa -2 tbsp(optional)
  5. Ginger and chilly paste -1tbsp
  6. Ajwayein- 1tsp
  7. Lemon juice -1 lemon
  8. Sugar - 3 tbsp
  9. Turmeric powder- half tsp
  10. Salt according to taste
  11. Garam masala - half tsp
  12. Hing - half tsp
  13. Oil - 4 tsp
  14. Water for kneeding dough.

For green chutney we need....

  1. Green Tomatoes- 2
  2. Kothambir/corainder leaves with stem - 2cup
  3. Whole turmeric - 2 inch
  4. Grated dry coconut -1/3 cup
  5. Water accordingly
  6. Green food colour or add2-3 ice cubes while griding.(ice cubes makes chutney green)

Vegetables we need....

  1. Surti papdi - 150 gms
  2. Walod papdi - 150 gms
  3. Tuwar dane -  1 cup
  4. Grean Peas /vatane - half cup
  5. Brinjal/ vangi (cut into 2)- 4 
  6. Chopped Suran/elephant foot - 100gms
  7. Chopped Sweet potatoes/ रताळ - 100 gms
  8. Chopped Purple potatoes- 100 gms
  9. Chopped potato - 1
  10. Finely chopped Green garlic- 1 judi.

For cooking undhiya we need....

  1. Oil - 3 big tbsp
  2. Ajwayein - half tsp
  3. Hing - 1 tsp
  4. Cashew - 10 
  5. Sugar - 3 tsp
  6. Lemon 🍋 - half lemon juice
  7. Salt to taste
  8. Water accordingly

Preparations.
Take all the ingredients for muthiya in a big bowl and kneed a dough. 
Make small balls.
Fry muthiya in broad pan.
Delicious muthiyas are ready.
In the same oil, fry potato, sweet potatoes, purple potatoes, and Suran .
one after another. 
In a cooker add 3 big tbsp of muthiya oil and fry some cashews.
Add in Ajwayein,  Hing and green paste and
Then salt, 3 tbsp sugar and half lemon . saute.
Add in kitchen king masala and saute for 1-2 min.
Now add in fried potatoes.
Papdi, peas and tuvar.
Add in Chopped green garlic and fry.
Add little water and cook till 3 whistles. 
Now add muthiya and stir it.
Undhiya is ready .
Undhiyu is mostly served with puries.
Platter contains undhiya, puri ,mudhiya and gajar halwa.
