Aloo Wadi / Patra / Colocassia































For making three rolls
preparation time:30 min


Ingredients

Colocassia Leaves--18-20 leaves
besan 1 cup
ginger garlic paste 1tsp each
red chillies/green chillies choped 1tsp
corainder leaves choped
turmeric powder 1tsp
corainder powder 1tsp
hing /asafoitida half tsp
sesame seeds/till 2-3 tsp
fennel seeds / badishep 2-3 tsp
salt for taste
tamarind pulp 2 tbsp
sugar 1tbs
oil for deep frying or shallow frying

In a bowl take besan ,ginger-garlic paste,red chillies/green chillies choped 1tsp
corainder leaves choped,turmeric powder,corainder powder,hing /asafoitida ,sesame seeds/till ,
fennel seeds / badishep , salt , tamarind pulp ,sugar and then
Add water to make smooth batter.


wash all the colocassia leave and pat dry with a cloth then

 apply the batter to colocassia leaf and place the other leaf on it


similarly again leaf  placing upward down and then  spread batter .


                           
                    alternately again leaf and then batter and so on.Use 6-7 leaves to make one roll




Now roll the leaves tightly 


After rolling/folding close both the ends by pushing the ends inside the roll
you can also tie thread to close the ends .


Grease the strainer and place the rolls in it.


Heat the steamer  or a big woke add water and place a rack in it.


When the water starts boiling ,place the strainer 


Close the lid and put weight on it and steam for 15-20 min


Remove the strainer


Let it cool completely


Cut the rolls into half inches slices.



You can shallow fry ,or add tadka of jeera mohri and sesame seeds or deep fry them.
I like to eat the steamed aloo wadi.
It tastes awsome...
