Plum cake / Christmas cake





Plum cake  is usually made during Christmas festival.It is made up of dried fruits or fresh fruits which are soaked in wine or rum for about 3 months before Christmas.It sounds hard but it is actually a very simple recipie and also can be made eggless and without oven.
So let's start and feel tempting.....

Ingredient.....
  1. Soaked dried fruits  - 100 gms each raisins, dates, kiwi, oranges, black grapes in 1 cup of wine or rum for about 1 week to 3 months.
  2. Oil / butter - 1/4 cup or 50 gms
  3. Sugar - 1/4th cup 
  4. Milkmaid - half tin
  5. Curd -  1/4 cup 
  6. All purpose flour / Maida - 1 cup
  7. Cocoa powder - 1/4 cup
  8. Baking powder - 1 tspoon
  9. Baking soda - 1/2 tspoon
  10. Cinnamon powder / dalchini - 1/4 tspoon
  11. Nutmeg powder / jaifal - 1/4 tspoon
  12. Chocolate essence - 1/4 tspoon
  13. Vanilla essence -1/4 tspoon
  14. Rum essence -1/4 tspoon
  15. Orange juice - 1 cup
  16. Wine or rum - 1-2 cup
  17. Orange zest - 1/4 tspoon
  18. Chopped dry fruits like almonds , cashew, walnuts, hazelnuts .
Preparation 
How to soaked dried fruits
  1. Tuttifruity ,raisins,finely chopped dried dates, mixed dried fruits like dried kiwi,pineapple,mango,cranberry, blueberries etc....
Mix
Add some grated orange zest.
In goes lemon zest.
Fill in the dry container.
Add in 180 ml of rum(old monk) or red wine for one month

Take 1/4 cup oil , 1/4 cup sugar and half tin milkmaid.
Add all above ingredients in a mixer grinder , further add 1/4 cup of curd and grind to a smooth paste.
Pour the above mixture in a mixing bowl.
Add in 1 cup of all purpose flour or maida using strainer.
Similarly add in 1/4 cup of Coco powder.
Now add 1 tspoon of baking powder.
Add in 1/2 tspoon of baking soda.
Add cinnamon powder and jaifal powder- 1/4 tspoon.
Now add 1cup of orange juice.
Add orange peel or zest .
1/4 tspoon vanilla essence.
1/4 tspoon chocolate essence.
1/4 tspoon rum essence and mix all together.
Now add soaked dried fruits and mix slowly.
Grease  alluminium cake tin or place butter paper in a tin.
Pour in the cake mixture and add  chopped nuts in between and on surface of the mixture.
Pre-heat the kadhai or a deep pan with a low rack in it.
Close a lid and bake it for about 40-45 min on a low to medium flame.
Check the cake by inserting tooth pick which comes out clean when cake is completely baked.
Cut the cake in slices.
