Paneer Tikka Momos / Veg Momos


Ingredient.....

For Dough
  1. Maida /All purpose flour  - 1 cup 
  2. Salt - 1/2 tsp
  3. Water - approximately half cup
For  Stuffing
 
  1. Paneer - 200 gms
  2. Finely chopped onion - 1 
  3. Finely chopped capsicum - 1
  4. Finely chopped garlic - 1tbsp
  5. Finely chopped ginger - 1tbsp
  6. Finely chopped green chillies - 1tbsp
  7. Finely chopped coriander leaves - 2tbsp
  8. Finely chopped mint leaves - 2tbsp
  9. Red chilly powder - 1tsp
  10. Coriander powder - 1tsp
  11. Roasted cumin powder - 1tsp
  12. Amchur powder - 1tsp
  13. Garam masala - 1tsp
  14. Black pepper powder - 1tsp
  15. Kasoori methi - 1tbsp
  16. Black salt - 1tsp
  17. Salt for taste
  18. Charcoal+ghee
  19. Schezwan chutney (optional)
Procedure .....

Preparation....

For making dough....

In a bowl take 1 cup maida or all purpose flour , add salt and make soft dough.
Cover and let it rest till we make stuffing.
For  Stuffing ...

Take 200gms grated paneer in a mixing bowl.
Add in finely chopped onion, capsicum, ginger, garlic and green chillies.
Now add all the spices and chopped coriander and mint leaves.
(Red chilly powder, coriander powder,garam masala, amchur powder, black pepper,black salt,Jeera powder,) 
Mix evenly.
Burn a charcoal on the gas flame.
Place the hot charcoal carefully in the small vati placed at the center of the stuffing.
Add few drops of ghee on hot charcoal and cover it.
Immediately cover with the big vessel leave it for about 10-15 min.
Smoky paneer tikka stuffing is ready.
Take a dough and knead for about a minute.
Make equal size very small balls.
Roll each one into a thin puri.(diameter )
Roll all the puries, sprinkle some maida taking care they don't stick to each other.
Place a small portion of stuffing in the centre .
Start to shape the momos by pinching with your thumb and index finger , make plates and continue till the end.
Pinch all over again to seal the momos completely.
Repeat with all the stuffing.
Preheat the steamer.
Place the momos into the steamer.
Steam for about 5 to10 min.
Paneer Tikka Momos is ready.
Serve the hot momos with chutney.
