Khaman dhokla





Dhokla is a vegetarian food item that originates from the Indian state of Gujarat. It is made up of fermented batter derived from rice and split chickpeas or chana dal . Dhokla is very simmilar to khamman however dhokala is made from batter derived from rice and gram  and is white in color . whereas khamman is typically made from chickpeas gram and looks yellow in color .Khamman is widely popular out side Gujarat but is misunderstood or incorrectly known as Dhokla. It can be eaten for breakfast, as snacks,even main course or side dish.
There were many complains from my viewers like there Dhokla does not come as fluffy as dhokla brought from store, regarding taste also many complains are there and are seen not satisfied with reccipe they have .. so here is my step by step recipe which will help you to get perfect fluffy and tasty Dhokla.


Ingredient.....

  1. Besan  ½ cup  
  2. Barik rawa -2tbsp
  3. Salt to taste 
  4. Sugar 2 tbsp
  5. Pinch haldi
  6. Citric acid 1 tsp
  7. Curd (optional)
  8. Oil 2 tsp
  9. Eno 1 sacchet
  10. Water for consistency
  11. Lemon

For tempering....

  1. Oil
  2. Mustard seeds/ mohri/ rai
  3. Curry leaves
  4. Hing
  5. Chilies 
  6. Water
  7. Coriander finely chopped For garnishing.


Half a cup besan (i have used measuring cups)


Sieve  it to incorporate  air 


Add in 2 tbsp fine rawa/sooji


Add in little water to make medium consistency batter.


Add in 2 tbsp sugar


Salt to taste.


Add 1sp curd (optional)


1tsp citric acid.


Add 1sp oil.


Mix properly to form a uniform and smooth batter.


Rest it for about 10 min.


till than heat a water in steamer with a rack in it.


and grease a plate with oil.


Add coriander seeds and fennel seeds 


As soon as water in the steamer starts boiling add one complete Eno sacchet in the batter .


Pour 1 sp water on it to activate the Eno.


Mix evenly.


Pour immediately in the grease plate.


Tap to remove the air space .


Place it in the steamer.


Cover  and put heavy weight on it,and steam for about 10-15 min.


Insert toothpick ,if it comes out clean it means it is done/ well cook 
Allow to cool.


Cut it into pieces.


Heat oil 


Add mustard seeds.curry leaves ,hing and green chilies


add 1 cup of lemon water


Add in sugar ....boil and cool the mixture.


Pour the tempering on the cooked Dhokla. 
Let Dhokla soak all the water which makes Dhokla fluffy and moist.


Garnish it with chopped coriander leaves. 



Yummy Dhoklas are ready to serve...!

Garlic Bread (Dominos style) / Garlic sticks




Garlic bread is quick , easy and delicious dish loved in my family along with pasta . It can be eaten with cheesy dip , mayonnaise or simply with tomato ketchup. Fresh Garlic bread from  hot oven spreads its aroma all over your house.

Ingredient.....

  1. Maida - 1 cup
  2. Milk  - 1/2 cup
  3. Dry Yeast - 1/4th  tsp
  4. Sugar - 1 sp
  5. Salt 1 tsp
  6. Butter 1sp
  7. Pizza masala/ Italian herbs-1-2 sp
  8. Finely chopped garlic - 3 Tbsp
  9. Finely chopped coriander - 1Tsp
  10. Grated cheese 2 cubes

Garlic bread...



Take a half cup of milk 


Add 1/4 tsp dry yeast to the milk



Add 1 spoon sugar 


Add half spoon salt and mix 


To make dough make sure to keep all the preparations ready.
Milk mixture,pizza masala,choped garlic,butter


Take 1 cup maida in a bowl.



Add in butter  .
(do not melt  the butter)


Add 2 tbsp finely chopped garlic


pizza masala /Italian herbs


Add above prepared milk mixture to make dough.


Knead  the dough well.


Grease the dough  well with some butter .


Tuck the dough and cover and let it rest for 2 hrs at room temperature.


The dough rises to double of it original size .


Punch and knead the dough again for 4-5 minutes.


To prepare garlic mixture  take butter , remaining chopped garlic in a small bowl and microwave  for 30 sec  to melt.


Flatten the dough with your hand.


Add chopped coriander to the butter garlic mixture after cooling.


Spread the garlic mixture generously.



Grate 2 cubes of cheese on the either side f the flatten bread.



Sprinkle some chilly flakes and Italian herbs on it.



Fold it into half and seal the edges or  you can press the edges with the help of fork.


Transfer to a baking tray.(tray lined with the butter paper)


Once again brush the garlic spread on it


Sprinkle some chilly flakes and Italian herbs on it.


Make a marks on it and bake at  180C for 15-20 minutes.





Enjoy delicious garlic bread.

Garlic sticks...




Roll the dough and stuff in the ready made garlic magic masala .It can be folded in to half or roll into sticks.

OR



Stuff in the garlic masala in the cheese slice and roll  in with flatten dough.

Place in the baking tray.(grease the tray)


Bake in the oven for 15-20 min at 180 C


Serve Hot....
