Dinkache ladoo / Gond ke ladoo



As soon as the winter starts in India ,all the houses spreads the aroma of ladoos.There are varieties of ladoo preparation in every homes,like gond ke ladoos or डिंकाचे लाडू ,methi ladoos,dry fruit ladoos,Aliv ladoo....etc.These ladoos are very healthy and has its own benefits.Today we will learn how to make this energy balls i.e Gond ladoos or dinkache ladoo.
 Gond /Dink is a type of plant derived an edible gum and believed to have a medicinal values  . It has about 50% of calcium and 20% of magnesium.so regular consumption of Gond helps to strengthen our bones, spine and teeths . It also helps in constipation and other digestive disorders.
Gond ke ladoo/Dinkache ladoo are very rich , delicious and wholesome  sweet treat enjoyed during the winters in every Indian house.

Ingredient.....
  1. Whole wheat  - 1/2 kg
  2. Dried dates - 1/2 kg
  3. Dried and grated coconut  - 1/2 kg
  4. Dink or Gond or edible gum - 100gms
  5. Khus khus - 100gms
  6. Godambi - 100gms
  7. Water melon seeds/magaj bee - 100 gms
  8. Aliv - 50gms
  9. Cashew - 200gms
  10. Almonds - 200gms
  11. Pistachio - 200gms
  12. Anjeer -100gms(optional)
  13. Kismish - 100gms(optional)
  14. Ghee or oil half kg /liter 
  15. Jaggery or gul (grated) - 250 gms or 4 vati

First step - Grate coconut , jagery,and remove seeds from dried dates.

Second step - Roast whole wheat till it changes its colour and grind it in a mixer grinder after cooling.

Third step - Roast grated coconut,khus khus,godambi , watermelon seeds, Aliv each ingredient  seperately ,one at a time and grind it altogether.
Forth step - Slightly roast seedless dried dates and grind in a mixer grinder.
Fifth step - coursely grind cashew,almonds and pistachio and keep a side .
                you can also roast almonds .

Sixth step - Heat oil or desi ghee  in a kadhai and fry edible gum or Dink or Gond ,and grind it immediately so it becomes like puree which helps to get it mix properly in mixing step.
Seventh step - Now heat a ghee and roast wheat flour (step 1) roast in medium flame ti the aroma comes .
Eight step - Mix all the step ingredients along with grated jaggery or gul when hot ,if required at hot ghee or oil for binding purpose and immediately make ladoos.
Take all the roasted grinded ingredients i.e dry fruits,dried dates ,coconut ,godambi, Aliv,magaj bee ,khus khus,wheat four and edible gum in a big vessel.
             mix all together and make ladoos.
                         store in container.
It makes approximately 50-60 medium size ladoos.

Masala Khichidi


Masala Kichidi is one of the Maharashtrian dish made from rice and different Dal's.It can be made in different consistency like water soft , Dry soft and fried one .It  be made in cooker or in vessel called patela. Masala khichi is generally spicy with loads of garam masala and chilly powder.

Ingredient.....
  1. Rice  - 1and half cup 
  2. Tur dal - half cup
  3. Moong dal - 1/4 
  4. Onion chopped - 2
  5. Potato chopped - 1
  6. Tamato chopped - 1
  7. Ground nuts/शेंगदाणे -2tbsp
  8. Ginger garlic coconut and one green chilly paste - 2tbsp
  9. Curry leaves -7-8
  10. Corrainder leaves chopped -2-3 tbspoon
  11. Oil 2tbsp
  12. Ghee -1tbsp
  13. Cumin seeds-1tspoon
  14. Turmeric powder/haldi -1/2 tsp
  15. Garam masala - 2tbsp
  16. Red chilly powder (bedgi)- 1tbsp
  17. Red chilly powder (kashmiri)-1tbsp
  18. Kanda lasoon masala -1tbsp
  19. Corrainder powder -1tbsp
  20. Salt as required 
  21. Water for cooking khichidi

Chop onion, potato, tomato, corrainder leaves.Take ground nuts and curry leaves.
With help of mortel and pesel make coursely grind Ginger garlic green chilly and dried coconut ( take 2-3tbsp of grated dry coconut).
Wash rice and dals together.
Heat oil in a cooker and when hot add cumin seeds i.e jeera
Add chopped onion, ground paste, chopped potato
Add ground nuts and chopped tomato.
Add all the spices haldi,chilly powder, garam masala, corrainder powder, Kanda lasoon masala.
Add rice and dals and stir for about 1-2min .
Add salt to taste.
Add warm /hot water according to your required consistency.If you want Khichidi to be little loose then add more water.Here i have added 2 glass of water to make dry khichidi.
Close the lid of cooker and make 2 whistles.
Add few drops of ghee to sides of cooked Khichidi.
Garnish with fresh cilantro or finely chopped corrainder leaves.

Rawa Dhokla / White dhokla






 Dhokla is a Gujarati dish with different varieties in it.Khaman dhokla , nylon dhokla, sandwich dhokla , rawa dhokla ,etc...They are steamed  sour and spicy cakes and loved snacks by all Indians .white dhokla is also made from rice, black gram and sour yoghurt but is time consuming.
Lets see simple, instant , few ingredients, yet yummy white dhokla recipe i.e Rawa Dhokla.

Ingredient.....

  1. Barik rawa - 1 vati 
  2. Besan - 2 sp
  3. Salt to taste 
  4. Sugar 2 tbsp
  5. Citric acid 1 tsp
  6. Curd  2 sp
  7. Oil 2 tsp
  8. Eno 1 sacchet
  9. Water for consistency
  10. Lemon

For tempering....

  1. Oil
  2. Mustard seeds/ mohri/ rai
  3. Curry leaves
  4. Hing
  5. Chilies 
  6. Water
  7. Coriander finely chopped For garnishing.

Take one vati/katori of fine rawa.
If you have thick rawa then grind it into fine.
Add in 2 spoon of besan.
Add 2 spoons of sour curd.
Mix together.
Add 2 spoons of sugar ,1 spoon oil ,1 tsp of citric acid and salt to taste.
Cover the vessel and Rest it for about 10 min.
Till than heat a water in steamer with a rack in it and Grease a plate with oil 👇
 Add in fruit salt (ENO) and immediately pour it in a greased plate.
Place the plate inside a steamer on a rack.
cover the steamer with a lid and place a heavy weight on it so that the steam should not come out . Steam for about 10-15 min.
                                    cool it.
                           Heat oil in a pan.
Add in mustard seeds ,green chillies and curry leaves and hing.
       Add in lemon water and allow it to boil.
                Add 1 spoon of sugar to it.
     Cut the dhokla into square shape pieces.
 Pour the tempering on the steamed Dhoklas and garnish it with chopped coriander leaves.
        Yummy Dhoklas are ready to serve...!
