Thalipeeth

Thalipeeth is Maharashtrian recipe made for breakfast or even dinner served with chutney or pickle . This Thalipeeth can be of various types ,can be made by mixing 2-3 flour or with bhajni or leftover dals. It can be made by directly adding batter on rava or on wet cloth .
It tastes awesome in every way. It is well known in different regions of Maharashtra.It is very delicious dish loved by all Marathi people.

Ingredient.....
  1.  Bhajni 2 cups
  2. Chopped Onion - 1 big
  3. Chopped coriander leaves -1/2cup
  4. Ginger garlic paste - 1tbsp
  5. Red chilly powder - tsp
  6. Kanda lasoon masala - 1tsp
  7. Turmeric powder -1/2tsp
  8. Coriainder powder - 1tsp
  9. Jeera /cumin seeds- 1tsp
  10. Ajwayein - 1tsp
  11. Salt to taste

Take all the spices along with chopped coriander leaves and onions.
 Ginger garlic paste.
Add in any leftover dal.
Two cups of Bhajni.(Chakli bhajni can be used)
Mix well and add ajwayein, jeera and salt.

Add spoonfull of batter on hot griddle and spread it by finger tips or spoon.
Or take the griddle on the kitchen platform and add batter to spread very well using your finger tips.This is the traditional way of doing it.
Wet your fingers in water every time your spread .
Place the griddle back on gas flame.Make small hole in the center using knife or any  round instrument
Add some oil in that hole and also on the sides.
Fry the thalipeeth from both sides.
It can be also made crispy or soft according to your wish.
Serve hot thalipeeth with chilled curd or pickle or any chutney.

Bhel puri

Ingredient.....

  1. Kurmure/Puffed rice - 1/2 kg
  2. Turmeric powder - 1 tsp
  3. Salt to taste
  4. Finely chopped onion - 2
  5. Finely Chopped riped tomatoes - 2
  6. Finely chopped green chillies - 2-3
  7. Finely chopped coriander leaves - 2-3 tbsp
  8. Tamarind and khajoor puree - 4-5 tbsp
  9. Lemon juice - 1tbsp
  10. Chat masala - 1tbsp
  11. Red chilly powder - 1tsp
  12. Nylon sev - 250 gms
  13. Khari boondi - 250 gms
  14. Flat puries 
  15. Pani puries

Sev, bundi, chat masala, Tomato ketchup, puries
Finely chopped onion, tomatoes, coriander leaves,and tamarind and khajoor chutney
In 1 tbsp of oil ,add turmeric and salt to fry puffed rice. saute till crispy.
To this crispy puffed rice,add chopped onion, tomatoes, coriander leaves,green chilies and sprinkle some chat masala.
Some red chilly powder
Add sev and tomato ketchup.
Now add crushed pani puries and  khajoor tamarind chutney.
( This chutney  is made by boiling seedless khajoor and tamarind....strain the pulp...add some jaggery, cumin powder and salt )
You can also add finely chopped dry fruits, raisin.
Mix all together.
Lets serve the bhel.....place an amount of bhel in a plate.
Spread some sev and bundi on it.
Some khajoor and tamarind chutney.
Some ketchup and crushed pani puries,bundies....sprinkle chat masala again.
Also add panipuri ka pani over it.

Vada Rasam

Ingredient.....
For vada
  1. White udat dal -2 cups
  2. Moong dal - 3 tbsp
  3. Jeera/Cumin seeds - 1tsp
  4. Salt to taste
For Rassam
  1. Finely Chopped riped tomatoes - 2 cup
  2. Cooked tur dal (puree) - 2 tbsp
  3. Tamarind pulp - 1tsp
  4. Garlic paste - 1tbsp
  5. Red chilly powder - 1tsp
  6. Corrainder powder -1 tsp
  7. Rassam masala - 1tsp
  8. Turmeric powder - pinch
  9. Black pepper powder - pinch
  10. Salt to taste
  11. Oil - 2tbsp

Vada making

Take 2 cups of white udat dal.
 Wash and soak in water for about 4-5 hours.
Grind it in a fine paste and let it ferment overnight.
Add Jeera/cumin seeds and salt to taste.
Mix for 2-3 minutes in one direction till fluffy .
Fry medium size vada.
Fry on medium flame.
Fry till golden colour.
Remove from oil....
And place them in warm water.
Squeeze the soaked vadas and keep in a plate.
Lets make rassam.
Finely Chop red tomatoes ( select riped ones) 
Kuthi garlic.
Heat an oil in a saucepan 
 Add garlic,some curry leaves and saute.
Add in hing / asafoetida
Chopped tomatoes.
Red chilly powder.
Coriander powder.
Turmeric.
Kanda lasoon masala(optional)
Salt to taste.
Add in tamarind Pulp and cook till the tomatoes are soft.
Add in 2 tbsp of tur dal(dal Puree)
Cook for 2 minutes and add in water for running consistency.
Freshly chopped coriander leaves.
Rassam madala.
Black pepper.
Boil the Rassam for about 5 minutes.
Pour hot Rassam on Vada.
