Pineapple upside down cake

Pineapple cake is very easy and delicious tea time cake loved by kids and  elders. It is fun making this cake.It is my favourite cake .pineapple slices and brown sugar are two ingredients which we compulsory require apart from our regular cake ingredients.Please note we cannot use regular sugar as it gets burnt during the long baking period. pineapple slices are easily available in baking materials stores.you can also use fresh pineapple slices ,only thing you need to do is slightly half cook it in a sugar syrup or in cooker take one whistle.

Ingredient....
  1. Oil  -1/4 cup
  2. Sugar - 1/2 cup or according to the sweetness required
  3. Milk- 1/2 cup
  4. Pineapple essence -1 tsp
  5. Maida/APF - 1cup
  6. Baking powder -1 tsp
  7. Baking soda - 1/2 tsp
  8. Brown sugar - 1/4 cup
  9. Butter - 2tbsp
  10. Cherry
  11. Pineapple slices

Take 1/4 cup of oil and sieve 1/2 sugar in a bowl.
Add in 1/2cup milk.
Mix well.
Add one tsp pineapple essence.
Few drops of  yellow colour.(optional)
Sieve in 1 cup of maida /all purpose flour.
In goes 1tsp baking powder.
In goes 1/2 tsp baking soda.
Mix well.
Add 1tsp white vinegar.
Our batter is ready.
Now heat a butter in a pan .
Add 1/4 cup of brown sugar.
Slightly heat for a seconds,do not cook it.
Pour in the well greased tin with a butter paper lined in it and place pineapple slices on it.
Fill it completely with slices.
Now pour in the batter
Now let's preheat a pan with a rack in it.
Place a tin and cover it with lid and bake under very low flame for about 30 minutes.
Check the cake by inserting a toothpick in it,if it comes out clean,it means cake is done and if the batter sticks the toothpick it means cake  needs to bake for more 5 -10 min.
