Jalebi
Ingredient.....
For Batter
- Maida /All purpose flour - 1 cup
- Sour curd - 1/4 cup
- Baking powder - 1tsp
- Ghee - 1tsp
- Water - approximately half cup
- Liquid Yellow or orange colour - 1/4 tsp
- Oil for frying
For sugar syrup or chachni
- Sugar - 1 cup
- Water - 1cup
- Cardamon powder - 1/2 tsp
- Kesar - 4-5 strands
- Lemon juice - 1tsp
- Dry fruits for garnishing.
Procedure .....
In a bowl take 1 cup maida or all purpose flour.
Add in 1/4cup sour fresh curd.
Add 1 tsp baking powder.
1 tsp home made ghee.
Gradually add water and prepare thick batter.
Add in yellow or orange food colour.
Mix evenly.
Pour in piping bag or milk bag.
See the consistency.
Fill all the batter in piping bag.
Prepare chachi by adding one cup of sugar to one cup of water ,boil till the sugar dissolves and little thickens. Add in cardamon powder, saffron strands, and 1tsp lemon juice ( lemon avoid sugar to recrystalize )
Make all the necessary preparations required for frying.
Fry jalebies under low to medium flame.
Fry till crispy.
Immediately put in sugar syrup or chachni.
Let it stand for 1-2 min and remove in another plate. Depends on how sweet jalebi you want soak the jalebi in chachni for long time.

Serve it with rabdi.
