Paan Coconut Ladoos







Ladoos are authentic traditional Indian sweet made during various occasions and festivals.They can be made of various flavours but the shape remains the same i.e round.We have always come across besan ladoo, dryfruit ladoo,rava/sooji ladoo .....etc.here i would like to share paan ladoo. Paan i.e betel leaves which are generally found in all the pan stall these are higly praised during pujas in indian culture. These paan ladoos can also be eatten as sweet dish off-course but it is awesome mouth freshener as well.These are very tasty and easy to make.

Ingredient....
  1. Paan/betel leaves  4-5
  2. Condensed milk half a cup
  3. Desiccated coconut 1 cup
  4. Green colour 2-3 drops
  5. Gulkand half a cup
  6. Ghee 1tspoon

In a food processor take condensed milk and betel leaves.


grind it into smooth paste



heat a ghee in a pan  and add in desiccated coconut . Roast for 2-3 min


add in condensed milk mixture and cook for another 4-5 min.



soon mixture will start leaving the sides forming a soft dough.Remove the mixture in a bowl


Arrange all the required stuff for making ladoos i.e coconut dough,ghee,gulkand and desiccated coconut . Apply ghee to palm , take a small amount of dough and flatten it ,fill in the gulkand and cover from all the sides to make a small ball.Roll the balls on desiccated coconut .










Paan ladoos are ready . Set them in refrigerator and enjoy. Happy Diwali.....

Chocolate ganash cake / cake made in kadhai






Ingredients

(Dry ingredients)
1 cup Maida  
¼ cup cocoa powder 
1 Tspoon baking powder
½ Tspoon soda
 (Wet ingredients)
50 gm butter 
2 tbsp curd
 ¼ cup sugar powder  
 ½ cup condensed milk 
¼ Tspoon caramel colour
¼ Tspoon chocolate essence
¼ Tspoon coffee essence/instant coffee
Soda water/milk

Procedure...

STEP 1
1   cup Maida   + ¼ cup cocoa powder +  1 Tspoon baking powder + ½ Tspoon soda
STEP 2
50 gm butter + ¼ cup sugar powder + ½ cup condensed milk + ¼ Tspoon caramel colour+ ¼ Tspoon chocolate essence + ¼ Tspoon rum essence + ¼ Tspoon cofee essence/instant coffee 2 tbsp curd


STEP 3
Mix both dry and wet ingredients (STEP 1+STEP 2).
STEP4
Adjust the consistency by adding slowly soda water/milk
STEP 5 
Grease a baking tin or place a butter paper in tin & pour a batter in tin.


STEP 6
Bake in preheated kadhai  25-30 min on medium to low flame .
Or bake in preheated oven at 180˚C for 30 min.



                                             Place the cake tin on the rack placed in kadai.



Cover the kadhai with another kadhai . keep some heavy weight on it so that steam will  not passout.



Cool the cake before frosting.


Frosting....

Required material:- Amul fresh cream (250ml pack) and 1 chocolate slab (I have used dark compound chocolate)
           Keep aside 2 spoons of fresh cream for designing the cake latter on  and heat the remaining cream , remove from the flame, and add chocolate pieces to it and cover the vessel, so that chocolate gets soften . Then give a mix .let the ganash cool before covering the cake .
As the ganash starts cooling, it gets thicker and thicker , pick up  the consistency  you want to decorated cake .
If keep for too long it comes to creamy texture this helps for piping and flower making.

cover the cake with the ganash.


Take 2 tbspoon of cream in a piping bag and form a circular design on cake as shown . With the help of toothpick prepare lines from inward to outward direction with alternate outward to inward direction which forms a flowering design.with the help of star nozle make border and cover the sides/height of cake. Decorate the sides with the white and chocolate chips.



Instant Chakali / Murukku






Chakali is  traditional Indian snack usually made during diwali festival and very popular in south Asian cusine at every home.

Ingredients
  1. Rice flour 1 + 1/2 cup
  2. Besan 1/2 cup 
  3. Sesame seeds 3tsp
  4. Cumin seeds 1tsp
  5. Chilly powder 1tsp
  6. Hing/Asafoitida 1/2 tsp
  7. Salt to taste
  8. Edible hot oil 1 tbsp
  9. Hot boiled Water 2 tsp
Procedure
  1. At very first heat enough oil in a kadai or a voke for deep frying the chakalies.
  2. In a bowl take rice and besan flour,hing,Sesame seeds,Cumin seeds,salt, Chilly powder and  hot oil from the hot kadhai and mix evenly by hand.
  3. Now add  hot water and make a soft dough.
  4. Grease the chakali mould ,fill in the dough and make chakali.
  5. Deep fry them at low flame which helps to make it crispy.

                      Take all the ingredients in a bowl and add hot oil and boiled water .
