Surti paratha

Parathas are always loved by everybody at my home.It contains various stuffing and in different shapes and serving styles. Various types of parathas like Alloo paratha,Egg paratha, Pocket paratha, Palak paratha,Methi paratha, Doodhi paratha, Achari paratha, Masala paratha, Sezwan paratha, Pasta paratha,Piza paratha,Cheesy paratha, Paneer paratha, Chicken paratha, Kobi paratha, Laccha paratha  and the list is endless....
I have learnt making parathas from my lovely mom.Her style of making parathas is very different. Paratha is very crispy , she adds lots of ghee to it and served paratha doesn't look oily atall . I remember during my childhood my mom use to get up early and make paratha everyday ,and we all kids use to have one each paratha before leaving for school.This was our daily routine.But I have to say this that we never get bored with her parathas.Everyday the paratha would taste more better and delicious than the earlier one.In the same way at my home my kids enjoy parathas like any thing and yes it is true History repeats.
 I stuff  parathas with lots of vegetables and make is various different forms and flavors and every time it comes out more and more delicious. My made parathas are loved by all. Specially  my grandmother , my dad , my mother in-law, my buas, my colleagues and my adorable daughter and son.
Today we will see Surti paratha. It is very healthy and super delicious.My kids call it  star paratha.

Ingredient.....
  1.  Roti dough 
  2. Finely chopped Onion - 1 cup
  3. Finely chopped boiled potatoes -1cup
  4. Finely chopped tomatoes - 1 cup
  5. Finely chopped capsicum - 1 cup
  6. Finely chopped carrot - 1 cup
  7. Finely chopped cabbage - 1 cup
  8. Finely chopped Garlic - 1 big
  9. Red chilly powder - tsp
  10. Kanda lasoon masala - tsp
  11. Turmeric powder -1/2tsp
  12. Coriainder powder - 1tsp
  13. Jeera /cumin seeds- 1tsp
  14. Salt to taste
Toppings
  1. Mayonnaise
  2. Tomato ketchup
  3. Pizza sprinkle
  4. Chilly flakes
  5. Chopped coriander leaves 
Preparation.....

Take one one each spoon of vegetables add in different spices and sauces to it.
Mix well.
Take big ball of dough and dust it with some flour.
Roll it into chapatti.
Load it with stuffing.
Cover from all sides and remove excess dough from top.
Press it in center .
Roll it carefully .Roll thick.
Add some ghee in hot griddle.
Fry the paratha from both sides.
Press... to make it crispy.
Take it in serving plate.
Cut it with pizza cutter.
Open each parts from inward to outward direction.
Spread some mayonnaise.
Load it with grated cheese cubes and sprinkle some pizza sprinkle, chilly flakes and coriander leaves.
Some tomato ketchup...
Paratha bites are ready to go in tummy....

Dutch cake


   

Ingredient....
For sponge...
  1. Maida/all purpose flour -1 cup  
  2. Cocoa powder - 1/4 cup
  3. Baking powder -1 tsp
  4. Baking soda - 1/2 tsp
  5. Butter - 50 gms
  6. Powered sugar - 1/3 cup
  7. Condensed milk-1/3 cup
  8. Milk/soda water - 1/2 cup 
  9. Vinegar - 1tsp
  10. Vanilla essence - 1tsp
For Frosting...
Whipping cream - 2 cups

For Ganash...
  1. Dark compound chocolate - 1/2 cup
  2. Amul fresh cream - 1/4 cup
  3. Glaze / neutral gel /transparent gel -1 tbs
Note- Remove all the ingredients from fridge and bring to room temperature before baking  and making frosting.

Step 1 Making chocolate sponge

Take 50 gms or 1/4 cup of melted butter in a bowl.
Sieve in 1/3 cup of powdered sugar.
Mix well till creamy smooth.
Add in 1/3 cup condensed milk.
Sieve in 1 cup of maida 
1 tsp baking powder.
1/2 tsp baking soda.
Gradually add in milk .
Mix well.
Add 1/4 tsp Vanilla essence and 1 tsp of vinegar .....mix well.
Add 1/4 cup of cocoa powder.Add 1-2 tbsp of milk if required.
Mix well.
Pour in a well greased tin lined with butter paper.

Bake in preheated pan with a rack in it for about 30 min.

Step 2 Making Ganash....

Chop dark compound chocolate.
Take 1/4 cup of Amul fresh cream in a bowl and microwave it for 30 sec.
Add 1/2 cup of dark compoud chocolate.
Mix .

Step 3 Assemble the cake.

Whip the whipping cream and assemble all the required things for frosting cake.
turn table,spatula, palate knife,cutting knife,cake sponge, ganash ,chopped chocolate and whipping cream.
Cut off the upper part of the sponge which is dome shape.we require a flat surface.
Slice the cake in to 3-4 slices.
Take one slice on turntable and soak with water.
Load the slice with cream and spread with palate knife.
Top it with ganash and some dark chocolate.
Repeat the process with all the slices.
Crumble coat the cake and set in fridge for 10 min.
Cover the cake with more whipping cream and give the finishing.
Add one tbsp of neutral gel in ganash to get good shine.
Mix and pour it on a cake.
Cover the cake with ganash.

Shift the cake to a base (card board) with palate knife carefully .
Design it with nozzle 
Fill the cream in a piping bag and write a message on cake.
Keep in fridge
